choc almond madeleines


For Christmas my parents bought me a madeleine tin. I decided it was time to try them out!
Since I had left over almond meal from christmas, I decided to make them chocolate and almond flavour.




You need:
-2x eggs
-125g butter (melted)
-1tsp Amaretto liqueur or almond essence
-150g caster sugar
-100g flour
-20g almond meal
-30g cocoa powder
-pinch of salt
-1/2 tsp baking powder

To make:
Preheat over to 200 degrees Celsius. Beat eggs and sugar, then add dry ingredients, mix as you add it. Then add your melted butter and amaretto. Mix well. Butter the pan, and dollop a spoonful of mixture in each pan. (don’t overfill).
Bake for 8-10 min. Remove from pan when cool.

RANDOM TIP: I don’t own a sugar shaker thing, and a sieve is too annoying to wash up just to sprinkle some sugar, so I used a tea strainer, small and easy, all you do is fill it and shake!

These madeleines look delicious but unfortunately I’m allergic to almonds so :(

    Thank you, is they are very yummy. If you can’t eat almonds, there are plenty of other recipes that don’t use almonds, you could just add more flour or malt and maybe some vanilla essence.
